By this time, most olives are ready to pick, although some of the trees at higher altitudes will not be ready until early next year. You will see lots of local farms with nets sprawled under the trees and farmers with sticks beating the trees to collect the olives. Most of them will go to make olive oil, pure and fresh and delicious on a salad.
